Green Juice ( as named by one of my 6-yr-old niece)

Lemon - 6
Pudina / mint leaves - 1 cup / 1 bundle ( as available in indian markets)
Sugar - 5 cups
Green Food color - little
Water - 6-7 cups
Procedure :

In a vessel, add sugar and then add water (the sugar should be immersed well).
Heat this sugar-water mixture well - till medium thickness. Take care not to make it too thick. It should not be very watery also.
Once the sugar comes to a correct consistence, now add the washed mint leaves and cook for 5 minutes only.
Remove from flame and keep it aside to cool down. After it cools squeeze 6 lemon juice to the mixture and add a pinch of green food color. Now strain this juice extract and store it in a bottle.
For serving:

Mix the juice extract with water in a 1:3 ratio and serve chilled.
Children will enjoy this drink more - because of its bright green color and its refreshing taste. It is easy to make and very healthy for the kids during this summer. We make this every summer ..esp during the summer vacation and kids at our home enjoy this very much and they forget about asking for pepsis and cokes!
