Mohanthal (A Gramflour-Mawa Dessert)
Ingredients
1 kg Gram flour (besan)
1 kg Ghee
400 grams Khoya
1/2 cup Milk
500 grams Sugar
3 teaspoons Cardamom powder
2 teaspoons Nutmeg powder
1 teaspoon Saffron
2 drops Yellow food colouring
4 tablespoons Blanched almonds

Method
Sieve the flour. Crumble the Khoya (mawa)thoroughly. Dissolve the saffron in 1 1/2 tbsp. warm milk and keep aside.

Make a well in the centre of the sieved flour and add 250 gms ghee which has been melted and warm milk. Mix well and keep aside for 4-5 hours.

Sieve this mixture through a steel sieve which has large perforations. The mixture may have to be forced through the sieve. Discard the residue.

Measure the sieved flour mixture. The quantity of sugar used has to be half the amount of the sieved flour.

Melt the remaining ghee in a deep bottomed pan, add the sieved flour mixture and stir constantly on a medium flame till the mixture turns golden brown and emits an aroma. Add the mawa and continue sauteing, till the mawa turns golden brown. Take off fire and empty the contents into another vessel.

Replace the empty pan on the flame and add the sugar into it with just enough water to cover the sugar. Stir continuously on a medium flame till it reaches a 2 string consistency or until you can shape small balls of sugar between your 2 fingers. When done, add 1 tbsp ghee, saffron, yellow colour (optional) and cardamom powder. Add the flour mixture. Stir for 3-4 minutes till the mixture is mixed well with the sugar syrup.

Pour onto a greased plate and allow to cool.

Garnish with chopped almonds.
